💁🏻This side dish is super approachable. It’s made with pantry staples you’re likely to have on hand (especially if vegan cooking is the norm in your household.) The method is super easy: quick roux sauce (8 minutes or less), food processor slicing, quick layer assembly (potatoes, S+P, onion, potatoes, S+P, sauce, bread crumbs, done!). Cover with foil and bake. Easy! 👏🏻⠀

  • 2nd clean-out-the-fridge meal today, inspired by William (👱🏻💕) who was in the mood for:⠀
A stir-fry with the last of our smoked tofu, sliced, cooked with maple syrup/soy sauce/sriracha, and oh! do we have any cashews??? 🤔⠀
So that's what we had. Crispy strips of smoked tofu in a soy sauce-maple-sriracha-sesame sauce with toasty cashews and sliced almonds + stir-fried cabbage, broccoli, and carrots + basmati rice + green onion. 🍽 • Finished up the last of our rice, carrots, broccoli, cabbage, and tofu. 💪🏻 #vegan⠀
  • 🍅 This isn't one of my typical breakfasts by any means, it's yet ANOTHER clean-out-the-fridge/kitchen meal (expect another one of those for dinner tonight too...) ⠀
🍴 1/4 block of tofu made into tofu scramble (my go-to ultimate fav. recipe is on → look for the tofu scramble breakfast bowl) and fried @littlepotatocompany hashbrowns with dill/salt/pepper/garlic powder, topped with green onion. And a last minute veggie side of fried halved grape tomatoes with salt/pepper and dill. Not the prettiest but this was SUPER tasty! 😋

  • I was doing a fridge audit and I was struck with intense peanut sauce cravings. Enter, the EASIEST veggie salad rolls ever. These are filled with shredded cabbage, cucumber, carrot, and cilantro, THAT'S IT! Ya know, I don't usually eat an 1/8th of a cabbage, an entire cucumber, and 2 carrots in one sitting, but when I do, copious amounts of peanut sauce were probably involved. 😜
• 2 tbsp soy sauce⠀
• 3 tbsp peanut butter⠀
• 1.5 tbsp sriracha⠀
• 1 tbsp sesame oil⠀
• 1 tbsp coconut sugar⠀
• 1 tbsp sesame seeds⠀
• 2-3 tbsp water to thin

Directions: Combine all ingredients in a blender and blend on high until smooth. Eat tons and tons on fresh vegetable things. 👌🏻💕 #vegan

• 🌤 sunscreen - this spray one from @sunbum is vegan + cruelty-free, SPF 50, and smells like coconut tanning oil ☺️
