Fruit Salad Recipes That Aren’t Boring


  • 😋🍛 Lunch! Korean chickpeas, sesame carrots, tangy cucumbers, @sunrisesoyafoods Tofu Puffs, and jasmine rice. I followed our Korean Potato Bowl recipe, substituting 2 cups of cooked chickpeas for the potatoes. Easy peasy! I mixed the chopped tofu puffs in the sauce leftover in my skillet.

  • UPDATE: These cuties have both found their forever homes!! 🏠🎉 🐱💕 I'm a few days late for #internationalcatday but a few days ago we said goodbye to Melody (left) and Harmony (right), the two sweet sisters we were fostering. We got to spend 4 wonderful weeks with them.

We watched them become healthier and grow everyday. It's so weird to see how much they changed in such a short period of time. Little Melody went from at tiny 260g scared kitten who barely had the energy to move or eat to an 860g playful, curious, cuddly and loving kitten. Harmony never had much of problem with her weight (she always had a 200-300g lead on her sister!) but she changed too! She went from scared, hissy, and totally untrusting to a crazy little thing who loved cuddles on her own terms! Her face started out really sweet looking, then she had a grumpy face stage, and now her face is all sweet again. All in just 4 weeks! Whoever adopts them will be so so happy. I'm really hoping they're adopted together like Forrest and Gump were, but either way I know they'll adjust to their new homes quite quickly. They're absolute sweethearts.  It's so hard to say goodbye to these girls but we're so lucky to be part of their lives for a short time. It was so special to witness such huge changes in them, physically and behaviorally. It feels so wonderful to earn their trust. With a lot of love and patience, they really trust that they're safe with you and that you're there for them when they need you, meowing for meals and coming to you for love and cuddles. Fostering is such a gift, both for the animals you care for and you as well!

  • What we're eating today: Peanut sauce tofu & potato veggie stir-fry with brown rice. 🌱🍛 Stir-fried broccoli, carrot, and red bell pepper. Crispy fried @sunrisesoyafoods extra-firm tofu and @littlepotatoco Fingerlings. Lots and lots of spicy peanut sauce made with @pulocuisine's Kare Kare Toasted Peanut Sauce, soy sauce, sriracha and water. All on a bed of brown rice. 😋😳 Topped with red chili flakes and sesame seeds.

  • Dinner! 🍲 This is a mish-mash version of our Korean Potato Bowl recipe (a bibimbap inspired bowl, today's version made with what we had on hand... What else is new!?) Here we have white rice, tangy cucumbers and red bell pepper (from the Korean Potato Bowl recipe), Al Gamja Jorim (a soy sauce-braised Korean potato side dish) made with potatoes AND crispy tofu. Plus avocado and sesame seeds on top, cause why not? THIS WAS SO GOOD!

I used the Al Gamja Jorim recipe, halving the amount of potatoes and subbing the equivalent for crispy pan-fried tofu (recipe link below). We used @littlepotatoco'sBlushing Belles, and @sunrisesoyafoods' extra-firm tofu.
